Mmmm, this post will be a short one as I’m still digesting 🙂 Mom’s Roasted Chicken and Jamaican Rice and Peas was out of this world this year and was accompanied by an unexpected new side dish of Baked Plantains in Orange Sauce (recipe coming soon!). I think I may have had more than a little too much. Plus I overindulged on all of the above as well 😆
