
Every now and again I get criticized by a reader for using ‘shortcuts’ in my recipes. Whether it’s a frozen this or a grated that, I’m bound to hear from someone who thinks that unless I grew it, picked it and shelled it myself, I’m really nothing but a lazy bum. Well criticism noted and embraced! I -am- a lazy bum (in my downtime), and I love the conveniences that modern supermarkets and entrepreneurs have provided. I’m also happy to share them with other readers who because of their own busy lives or foreign locations only have access to pre-packaged items.
Having said all that, it doesn’t mean that I have anything against doing things the old-fashioned and labour-intensive way. In fact I continuously praise the day that I learnt that J loves to ‘buss coconuts’ … whether green or brown give the boy a cutlass or hammer and he’s happy as pappy. Now that I know this I buy them a few at a time, give them to him to do in bulk, cock up on a couch and just relax. They never go to waste as I use coconut a lot in my recipes (both cooked and raw) and I can rest assured that I’ve gotten the freshest items possible without having to break a sweat (or nail). How’s that for a win-win scenario?

Dear Petra, I respond to many emails as often as I can, usually on a daily basis. As I am sure you know from past posts my offline life has been quite hectic. I don’t have a record of any questions from you so it is quite possible that your message either got caught by my spam guard, got lost in the flow, or is still to be addressed and will be when I get to it. It’s unfortunate that you would assume the worst about me or try to malign my character rather than decide that there probably is a reasonable explanation. I am, at the end of the day, only one person with limited resources and hours.

Great post! I tried to “buss” my own coconut a couple months ago–to make authentic coconut bake (from this site by the way!)– and ended up going to the er:-) Trust me, I’m looking for a shortcut next time. Sometimes it pays to be a lazy bum;-)

Sarina has always been very down to earth, classy and responds to all received questions. Petra, you have to understand that she, too, has a life and an extremely busy one at that. Trinigourmet is a labor of love but not the only one; Sarina has other responsibilities that she MUST attend to as well, as I’m sure is the case in many people’s lives. It is petulant and rather unfair to just assume the worst because for whatever reason your question wasn’t addressed in the immediate fashion you would like it. Making hasty judgments doesn’t get you an answer any quicker than if you had just waited patiently. Sarina answers everyone’s questions when she can but they are ALWAYS answered. Just a little “food” for thought.

As a child I loved bussin’ coconuts and taking them from the shell. I haven’t outgrown my liking of the task. Such a good stress relief. It’s the grating of it after that I detest. Who say food processor?

It’s funny how you mention shortcuts. I do like to cook and bake from scratch, but we all have to take a few shortcuts every once in a while. Sometimes I feel guilty for doing it, but then I realize how much time I saved and the food still tastes good, so I get over it real quick!

I’m a lazy bum…if I could find someone to do that to coconuts for me, I would eat more raw food. I like raw desserts, I just hate doing the coconuts.

If there are people who like to chop things, let them. Dad does the chopping mangoes, bussing coconuts, grating etc in our house. Distribution of labour and development of specialist skills is a sign of excellent management
