I love coconut rock cakes my grandmother made the best rock cake ever Oh sigh I have to try this recipe... I asked my Jamaican people ( I live in Jamaica now) and toto is like a cake no raisin in it though... they actually called it a pudding. But then to them sometime a pudding is just a really moist cake as in their Christmas pudding which is a fabulously rich and moist black cake or fruit cake.

Made these and they Were a delight. They were just perfect, a crunchy hard exterior with a surprisingly light inside. I made a second batch without egg (I used ½ cup milk) for my vegetarian brother, that also was perfect. Everything was so easy and I made the entire dough in the food processor. The sugary crust without a doubt is not to be skipped.

My background is Jamaican and I know these as rock buns as well. I've never heard of toto. I add candied cherries to my rock buns along with raisins and people are always asking for more. You can do this as a substitute for raisins also. yummy :) i think i'll make these this week! great childhood memories
