<p>I first made these muffins late last year as the dessert portion of a Shabbat menu. Light, moist, and not too sweet they would make a perfect complement to an afternoon tea <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> The recipe is also very forgiving in terms of composition. Feel free to vary the type of nuts and fruits used, you&#8217;ll notice that in the below pics I used walnuts. I&#8217;ve done so with no problems <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> Something I also like to do is to include the juices from tinned fruits into the batter <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p><b>Almond-Peach Muffins </b></p>
<p><b>SERVINGS: 12</b><br />

<p><b>INGREDIENTS:</b></p>
<p>1 1/2 cups all-purpose flour<br />
1 cup sugar<br />
3/4 teaspoons salt<br />
1/2 teaspoon baking soda<br />
2 large eggs, lightly beaten<br />
1/2 cup oil<br />
1/2 teaspoon vanilla extract<br />
1/8 teaspoon almond extract<br />
1 1/4 cups chopped fresh or canned peaches<br />
1/2 cup chopped almonds</p>
<p><b>METHOD:</b></p>
<p> 1. Preheat the oven to 375F<br />
 2. Grease and flour a 12-cup muffin pan or line the pan with paper baking cups<br />
 3. Sift the flour, sugar, salt, and baking soda into a medium bowl. Set aside</p>

<p> 4. Beat together the eggs, oil, vanilla extract and almond extract in a small bowl</p>

<p> 5. Pour into the flour mixture and stir just until moistened<br />
 6. Fold in the peaches and almonds</p>

<p> 7. Fill the muffin cups 3/4 full with the batter<br />
 8. Bake for 20 to 25 minutes, until golden brown<br />
 9. Cool for 10 minutes, remove from the pan, and cool briefly on wire racks</p>

<p>OK guys, so sorry for taking so long to return but things have been INSANE! Avon has been taking over my life, which is not necessarily a bad thing, but definitely unexpected! It&#8217;s quickly becoming my main source of income, which after a year of having little to no income is a very welcome thing, especially since I love everything it involves <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> I have however not stopped cooking and I have finally found the time to complete some of the many unfinished entries that are currently lingering in &#8220;draft-ville&#8217;. </p>
<p>Here in Trinidad the term bake is applied to any bread which is not leavened with yeast. It also usually involves cutting fat into flour in the early stages. People often ask me how I get my bakes to be so soft, well after much soul searching I am ready to share my &#8217;secret&#8217; <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_razz.gif' alt=':P' class='wp-smiley' /> Ice water! I love to keep the dough as cold as possible and nothing does that better than ice water. Not only does that stop the gluten in the dough from toughening up it also keeps the little fat particles solid. This way they generate more steam in the baking process, resulting in a light fluffy bake. Of course, I have also heard that there are people out there who also love a rock-hard bake&#8230; So, I guess in that case I suppose doing the opposite of anything I suggested would yield you the results you desire <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  </p>

The New Year literally started out with me submitting my first refund, in over a year of mailing out Naparima Cookbooks. And it wasn&#8217;t the last&#8230; It appears that everything shipped on December 5th has gone AWOL. What makes this upsetting to me is that the packages were mailed promptly from my end and did arrive in the US, however the US Postal Service still has failed to forward them from the port of entry. Now I get to bear the brunt of everyone&#8217;s frustrations&#8230; fun&#8230; (not).  Looks like I&#8217;ll be filing a few compensation claims with TTPost by the end of the month <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_confused.gif' alt=':?' class='wp-smiley' />  </p>
<p>Over the past 4 months TTPost has made quite a few changes when it comes to the rules and regulations governing Express Mail packages. They&#8217;ve been inconvenient and timeconsuming enough for me to consider discontinuing my Naparima Book Service (and I do consider it a service, as opposed to the opinions of a few I am -definitely- not making any wild profits on this - I wish <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_lol.gif' alt=':lol:' class='wp-smiley' /> ). We&#8217;ll see <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' /> </p>

I can&#8217;t believe it&#8217;s been so long since my &#8216;triumphant&#8217; return post <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_razz.gif' alt=':P' class='wp-smiley' />  Honestly, I never thought that things would get so hectic, so quickly. Yes, it was holiday season but still!  Basically, within one week of writing my last post I was offered a weekly radio segment, signed up to become an Avon Lady (hehehe, if you&#8217;re in the POS area/West Trinidad I&#8217;d love you to contact me) and also restarted my coaching practice. Between that and making time for an equally unexpected &#8217;significant other&#8217; in my life &#8230; well&#8230; there have NOT been enough hours in a day <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> </p>
<p>At the moment I&#8217;m trying to find a way to restructure everything so that I can share my food experiences on a more regular basis, so bear with me. I have not stopped cooking, or eating out (in fact I eat out a lot more now, whee dates!) but the time to edit the photos and write them up has been sorely lacking&#8230; I have set aside much of today and tomorrow to do just that so stay tuned <img src='http://www.trinigourmet.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p>I&#8217;ve been dreaming of mango lassi for some time now. Mango lassi was something I first discovered during my college years in the US and I haven&#8217;t had it since returning to Trinidad seven years ago. This rich cool, slightly tart, beverage is the perfect complement to spicy, fiery cuisines and is also hearty (and healthy) enough to be a satisfying shake all on its own. </p>
<p>When our mango bounty began to wind down in October I thought I would use some over-ripe fruits that we had on hand to try making this nostalgic treat for myself. I combined and tweaked several online recipes until I came up with a combination that reminded me of the ones I had &#8216;back in the day&#8217;.</p>

<i>Makes 4 servings</i></p>
<p><b>INGREDIENTS:</b></p>
<p>1 cup plain yogurt<br />
1/2 cup milk<br />
1 cup chopped mango (peeled and stone removed)<br />
4 teaspoons sugar<br />
1/3 cup cold water<br />
9-10 ice cubes</p>

How much does one say about one&#8217;s culinary mishaps when they occur? Well I think we&#8217;ll all agree that to some extent we all gain some reassurance and confidence from learning that others run into less than stellar kitchen moments. Love the interesting use of candied grapefruit peel, definitely not something that I see (or hear about) on a daily basis!

<p>A round of applause everyone to Cakelaw.
