Chris & Courtney - Thanks for the kind words! :) now I am starting to plan gluten-free holiday recipes. ack! :)

Julie - Thanks for the heads up on the cornflakes. I used a local brand of cornflakes (I am in Trinidad) made by Seven Day Adventists. It didn't have anything listed in the ingredients besides corn and honey and mom didn't have a reaction so I'm hoping that means it was OK... I'll update the ingredient list to make it clear that the cornflakes should be gluten-free though as I didn't know about the malt flavourings in some brands! I will also check the brand of cornflakes that she has for breakfast for this. Thanks again, there's a lot the doctors don't tell us :)

ohh.. your dessert looks delicious! I'm going to have to try it!!!!
I have been Celiac for a few years now..as is my daughter and granddaughter. Its a big adjustment but to feel better just by eliminating gluten is well worth it!
I just wanted to make sure .. you are using gluten-free cornflakes, right? Kellog's Cornflakes as also other brands flavour their cornflakes with malt with is made from barley, therefore gluten! There are a few co. that make gluten-free cornflakes like Nature's Path which I like the best.
Maybe you already knew but you didn't specify gluten-free cornflakes so I just wanted to make sure. I don't want your Mom feeling sick again and not knowing why !

I am sorry to hear that your mom was sick! I will be tuning in to your new gluten-free posts. It wasn't until I dated a gluten-free guy that I realized how much gluten is in what we eat everyday. Makes me happy we have one another to learn from. There are many great gluten-free blogs. :)
