Pastelle Making

President of the Santa Rosa Carib Community [1], Ricardo Bharath-Hernandez singes a banana leaf over a fireside, as he prepares to make pastelles [2] at the Carib Community Centre in Arima yesterday. The community prepares dozens of pastelles annually for sale.

This image and caption appeared on the front page of the Newsday Newspaper [3] (December 20, 2006). Sadly, the website of the Santa Rosa Carib Community no longer appears to be operational however there is still information to be gleaned from their Wikipedia entry [4]. The Caribs are the descendants of Trinidad’s aboriginal peoples.
