		<description>Lydia - I was originally pondering a recipe that combined mint and mustard for the food challenge I submitted it to (those ingredients were the stipulation)... that was the origin for how this recipe evolved. It went through several incarnations on paper and originally was going to be a fish dish until I saw chicken thighs on sale in the supermarket and it evolved once again to this, the final version...  it was very yum :)</description>
