Trini Cooking Classes @ The Institute of Culinary Education (New York City)

It appears that from time to time the Institute of Culinary Education in New York City, USA has a recreational cooking course on the cuisine of Trinidad and Tobago! Titled “Aloo Pie, Pelau, and Accras: The Multi-Cultural Cuisine of Trinidad” it is taught by Ramin Ganeshram, author of the very excellent Sweet Hands: Island Cooking From Trinidad And Tobago.

The Institute of Culinary Education (ICE) Recreational Division is the United States’ largest hands-on cooking, pastry, baking and wine education program with 1,700 classes offered seven days and nights a week. Each year, over 23,000 students choose to learn a variety of popular regional and international cuisines alongside prominent chefs in small classes.

Course Description:
Callaloo and Buss Up Shut. Mother-In-Law and Kuchela. Chip Chip and Doubles. The verbiage of Trinidad??????s cuisine is both lyrical and mysterious and tells the story of a rich and eclectic cultural heritage. Ramin Ganeshram, author of Sweet Hands: Island Cooking From Trinidad And Tobago and a thirteen-year veteran journalist, shares some of the most popular foods from this Caribbean nation, which boasts an organic fusion of African, East Indian, Chinese, Spanish, and native-Caribbean cuisines. Students will get to try their hands at traditional ??????home?????? fare and the street food that is so popular throughout the island—plus a not-to-be-missed secret family recipe for a truly festive rum punch! Your menu will consist of Aloo Pie; Accras; Creole Fried Fish; Beef Stew with Dumplings; Chicken Pelau; and Rum Punch.

Man just reading that has my tummy rumbling! I’d sign up! 🙂 Unfortunately the course isn’t being offered at the moment however I’d definitely keep an eye on the site to see if it opens up again.
