Made by grating bars of compressed spice-infused cocoa and simmering with full-cream milk (plant mylks should be as full-bodied as possible) and sugar before straining, the final result is both heart-warming and soul-affirming.

The CDCTTL (Cocoa Development Company of Trinidad and Tobago) will continue to promote and develop the expertise of local cocoa producers to international award-winning levels, in fulfilment of its mandate to champion the success of the fine or flavour cocoa industry.
