Surrounded by the vibrant beats of Carnival 2024, I had to share this flute of bubbly that welcomed me this evening at this year’s installation of Hyatt’s annual all-inclusive fete LIME. From the moment I stepped in, I was swept away by the mouthwatering aromas and the array of culinary delights on display. From local standards to Jamaican jerk to Japanese ramen and more, every bite tonight has been a journey of flavors. Stay tuned for more in my stories and over the coming days!

Seafood can be a bit tricky, but trust me, it's not that tough. Here are some simple tips:

1. Go for fresh seafood every time.
2. Keep your recipes simple; it often works better.
3. Garlic, butter, lemon, and herbs are seafood's best friends.
4. Keep an eye on cooking time; seafood cooks fast. (tip: remember that ingredients will continue to cook in the residual heat)
5. Don't forget to spice it up with some Caribbean flavors like in my local “Stew fish” above! . 🌶️

I feel so fortunate that I inherited several pieces of cast iron cookware that were handed down to me from my father and my aunt. In total, I have 4, but pictured here are the two that I use the most.

Every 3 months, I make sure to reseason them.

Doing so ensures that they stay “non-stick” and do not rust. People are often intimidated by reseasoning their cast iron cookware, but there is no need to be.

The steps I use are quite simple:
1) Preheat my oven to 450 degrees Fahrenheit
2) Spread a thin layer of vegetable oil over my pans, top and bottom.
3) Place them upside down into the preheated oven for 30 minutes. I also place a cookie sheet below them to catch any drips.
4) Allow the pans to cool for an hour or so
5) Repeat the process 3 more times.

Things can get very smoky, so make sure to keep your windows open and have a fan/air purifier going as well if necessary.

Why is this important? 🍳 Reseasoning your cast iron cookware not only keeps them in prime condition but also enhances your cooking experience. It’s the key to maintaining that perfect non-stick surface and preventing rust, ensuring your culinary creations are at their best.

Peanut punch was ubiquitous in my childhood. Sold in small drink cartons for kids, at corner shops and smaller restaurants as well as malls, it seemed it was everywhere.

Now it’s prevalence is greatly reduced however it’s rumoured benefits, especially in terms of energy and um... “stamina” are still the
stuff of legend.

Did I also mention it’s just straight up delicious?

Ingredients:
2 cups milk (or non-dairy substitute)
1/2 cup creamy peanut butter
1/4 cup sugar

8-10 ice cubes (or 3/4 cup ice water)
1/2 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp vanilla extract

Method:
1. Blend thoroughly until ice is crushed (1 minute approx.)
2. Adjust thickness and sweetness to taste
