Never attempted to make a butter loaf before but based on my experience with working with it in my other breads I would have to say that Gluten is the magic ingredient in all those soft bakery breads and rolls. You can read my hot cross buns post where I talk about gluten.
I like the change to your copyright notice. I am toying with the idea of saying something similar myself Guardian recently stole Cynthia and some other bloggers pics for their Easter recipe. I alerted her. They didn't even remove the Taste like home from the pic!
Thanks a ton for the input wizzy :) Will take a look at your hot cross buns post soon as I finish this reply :) Definitely gonna use bread flour next time and play around with some proportions, inc. the length of time I allowed the yeast to bloom. Am pretty much working out the recipe as I go along as I don't have anything formal that I am working with, rather recollections and memories :) But it's fun!
I can not believe (no wait I can) that the Guardian did that. That is just shameful. And the thing is that they do know it's wrong, it's just that they feel untouchable (the same thing they will judge politicians and businessmen for in their editorials tsk tsk) .
