This recipe is my submission to Mixology Monday. I decided to use Orchard’s Carrot Punch (which includes pineapple juice, orange juice, and passion fruit) instead of plain carrot punch and as a result I think this is why the punch didn’t have a strong ‘carrot flavour’, something I was really looking for. I also am not too sure about how the beer and condensed milk went together. I have another recipe that uses stout and I think I’ll give that one a try in the near future for comparitive purposes. This cocktail tastes best when served ice-cold over cracked ice. It was light and fruity, though if I had used pure carrot juice that flavour would probably have been more intense. I would have liked it to be a little creamier so next time I may use a tin and a half (or maybe even two) of condensed milk…
