I can’t take credit for the video though, it was found on YouTube 
on making trinidad curry you do not season the meat with curry.u try to keep the seasoning simple.salt ,pepper,cilantro ,garlic,onion, greenonions,cumin powder.then you put oil to hot add curry powder fry in oil .this is to cook the curry.it browns in the oil.then you add the meat.and cook .if cooking wild meat or fish or crab you add coconut milk to that.this way your curry can last the next day if not prepared the right way it gives you a diarrhea.
This is the best curry chick I have ever made, and ever tried. I plan to use this recipe from now on, I found it easy to follow too! I wish he would make more video recipes
