I used brown jasmine rice for the grain and fried up my own onion rings. They definitely add a much needed savory “bite” to the overall flavor profile. This is a great quick side dish that makes use of ingredients that you may already have on hand. ⁠
    Potato Tahdig [LINK IN BIO] is a Persian rice dish Potato Tahdig [LINK IN BIO] is a Persian rice dish that refers to cooking fluffy basmati rice until the base forms a crunchy and delicious crust, what we Trinis fondly refer to as “bun bun”. Well in Persian, “bun bun” is Tahdig! So, I suppose I could also call this dish Potato Bun Bun hahaha (but I won’t). ⁠

Following this recipe I made a few changes, last but not least, using a rice cooker to prepare the dish from start to finish. Although a cast iron skillet would have done the job beautifully I was apprehensive about bringing out the only platter I had on hand that was large enough to accommodate the circumference of my skillet.⁠

Online I read that Persian rice cookers are designed to create the perfect Tahdig in a way that Asian rice cookers usually can't, however I felt that my Korean appliance would do the trick as I knew from experience that it’s warming feature, run long enough did ‘crisp’ rice on the bottom, and that its non-stick surface would make unmolding the layers a cinch. And it did! ⁠

Other tips that I followed (outside of the recipe) was soaking the rice in water for several hours before parboiling it for 5 minutes. After draining the parboiled rice I added it to the rice cooker (after folding in the additions) and then poured in 1/3 cup water. I then let the rice cooker run for 90 minutes total (total cooking time + subsequent keep warm setting). ⁠

Whether you follow the recipe as written, or follow my rice cooker adaptations, you won’t be disappointed to give this one try! ⁠

• Marinate overnight (I also like to 'jab' the meat with a small knife against the grain both to break up the connective tissue and to allow the tenderizing marinade to penetrate more deeply)⁠

• Prepare to medium/medium-rare doneness. The meat will get slightly tougher as it cooks longer.⁠

• Slice thinly -against- the grain⁠

I cooked this recipe from Atikins.com [LINK IN BIO] on a medium-high heat for 90 seconds per side and then "tented" it with foil for 10 minutes. The result was tender, juicy and delightlfully garlicky.The flavour only got better the longer the meat sat. To reheat I recommend using a steamer on a low heat. It will warm through the meat while keeping it juicy and at relatively the same amount of "doneness".⁠

Light and spicy, chow consists of marinating fruit in a mixture of salt, pepper, garlic and (essential) chadon beni/bandhania/culantro. It's a great quencher  and quite refreshing on hot days.⁠

The best way for me to describe it to those familiar with Trini foods is “Imagine if Stewed Chicken and Pastelles collided!” Confused? Envision chicken pieces marinated in herb-filled citrus juices and then cooked until falling off the bone with olives, raisins, potatoes, tomatoes and olive oil. ⁠

When I was in high school there was a brief craze among my parents, and their friends, to make noni juice at home. If you've never smelled a noni fruit count yourself lucky, very lucky! I just had to share a throwback pic of this awesome @instantpotofficial Air Fryer Lid that I procured a year ago thanks to the generosity of the SN Famalay! So far I've had wonderful results with the bake, broil and air-fry features (and shown the process on-stream). I'm still to utilise the roast and dehydrate settings but I know I will eventually. Definitely a wonderful supplement to my well-used dedicated Air-Fryer and a wonderful expansion of the Instant Pot's original capabilities! ⁠

I remember one evening when I had just put bread in the oven and a guest called to say they would have to cancel as their ride had bailed on them. [LINK IN BIO] I originally laminated his handwritten notes, given to me when I went off to the US for college, so that they would survive the inevitable spills and splashes of my initial trials. Now I'm so glad I did as they still look as new now as when he first handed them to me. This dish was his go-to over Carnival Monday & Tuesday! ⁠ ⁠
