Mom's Curry Pumpkin, Curried Eggplant and Rice

Just a photo of a random lunch mom made recently. She also made curried chicken but I wasn’t in the mood for any :)

    I see where you get your skills.

    RECIPES.. I need recipes, esp. now that I am trying to cut down on the meat.

    Did mom share her curry chicken recipe because that is still the yummiest dish I have seen in a LONG TIME!

    What is the curry of choice in Trinidad?

    The States needs your assistance…thanks!

    Ant - hehehe, thanks for the constant reminders. I really am -that- forgetful :) I will ask my mom today about the curry saim recipe :) The curry of choice in Trinidad is madras blends :) If you have any trouble locating them let me know :) I will also try to get her curry chicken recipe but until then check out this post :)

    We’ve got a whole heap of eggplant at home, and we’re looking for ways to cook it, so please please post a recipe for the curried eggplant, because it looks yummy.

    I am looking for different ways to cook pumpkin and I found this and it looks amazing! Plus my husband used to live in Trinidad so he would be sure to love it too! Any chance of the recipe?!
