So you thought I would just leave the Trinidad Christmas recipe series without a recipe for homemade Ginger Beer? Fo’ shame! (and don’t worry, Punch de Creme and Paime are not far behind) :)


Carmen’s Jamaican Ginger Beer

1. Peel 1lb of ginger – peel and blend with as much water as needed to get a good pulp
2. Put in large glass bottle
3. Set in sun for 2 days
4. Bring inside and strain
5. Add more water (about 1liter) and squeeze the grated ginger in this water. Bang out the ging !! :D
6. Discard the used and abused ginger.
7. Add more water. You want about a gallon.
8. Add 1.5lbs granulated sugar
9. Pour into clean bottles.
10. Add 4 to 5 cloves per bottle.
11. Allow to ‘rest’ on the counter for two days before refrigerating.

    Oh you should definitely try making your own :) It’s not that hard either :) But be prepared, it has a really strong BITE!! :D lovely tho :)

    DO you make wine too? seems like everyone in Trini Makes wine including my mom…and it tastes really good!

    Marsha – ah missed out on the wine trend.. i dunno why… well mommy not familiar with it, and I don’ think my father is either cos he is kinda first generation himself (long story).. but chile i found a recipe for Five Fingers wine… and i curious to try! that and pommecythere wine :D and pomerac wine lolz!!! I never tasted any of them tho :( People must be keeping their stocks from me :(

    ooo yum! i love ginger beer! do you think leaving it on the heating pad where i ferment my kombucha would work? there is not much sun this time of year, and bottles outside would probly shatter cause we are having a fierce freeze.

    Boo – yes a heating pad would help (you may have to double the length of time depending on the temperature), also a good option is leaving it in a gas oven with the pilot light on :)

    we only have electric (i get sick from gas) but i will try the heating pad thing with a half batch and see how it goes. oooh i lOVE ginger beer!!
