Pastelle Making

Caption:
President of the Santa Rosa Carib Community, Ricardo Bharath-Hernandez singes a banana leaf over a fireside, as he prepares to make pastelles at the Carib Community Centre in Arima yesterday. The community prepares dozens of pastelles annually for sale.

This image and caption appeared on the front page of the Newsday Newspaper (December 20, 2006). Sadly, the website of the Santa Rosa Carib Community no longer appears to be operational however there is still information to be gleaned from their Wikipedia entry. The Caribs are the descendants of Trinidad’s aboriginal peoples.

This is the second christmas that I made my own Pastelles. I gave some to a few of my friends who said they tasted great and are behind my wife and I to get into the catering business. We cook and make many Trini recipes. However, can anyone tell us where we can get a Pastelle Press here in New York? Your help would save me the tedious task of pressing the Pomasa between two iron Tarwas.
    Sincere Thanks. C.J.

Hi Carlyle, I hope that someone will be able to answer this question for you… if not I’ll move it into a main post… have you tried searching for a tamale press…? you may have more luck searching under that term πŸ™‚
